Whole Roasted Pig
Local NJ hog, slow roasted in our Caja China until falling off the bone with Crackling Crisp Pork Skin. Served with three of our Signature BBQ Sauces (Honey BBQ Sauce, Carolina Vinegar Sauce and South Carolina Mustard BBQ Sauce “Columbia Gold”). The finished Pig will be displayed on a decorated platter/tray.

Fresh baked Local Cuban Rolls from Elizabeth, NJ. (Does not contain Lard.) Comes with Butter Packets.

House-made Garlic and Dill Refrigerator Pickles.

Crumbly Golden Cornbread studded with Organic Corn Kernels. Sweetened with Fresh Honey from Long Branch NJ.

Handmade Hamburgers/Cheeseburgers
Handmade Certified Angus Beef Burgers grilled to order. Served on a Fresh Baked Bun with or without Cheddar Cheese and American Cheese.

New York Style Hot Dogs
Locally Smoked All Beef Hot Dogs served on a Fresh Baked Bun. (These Frankfurters are made in smaller batches. A Polish market in Linden, NJ makes us a special size Dog.)

Fixin’s Bar
Fresh Polish Sauerkraut, Onion Sauce, Sweet Pickle Relish, Hot Cherry Pepper Relish, Heinz Ketchup, French’s Yellow Mustard, House Mustard and our Super Special Secret Sauce to be enjoyed with your Hot Dog or Hamburger.

Sides

Birch Beer Bacon Baked Beans
A blend of Northern White and Kidney Beans tossed with Rendered Thick Cut Slab Bacon. Braised in our Birch Beer Infused BBQ Sauce.

Grilled Corn on the Cob
Tender Grilled Jersey Corn Butter basted and simply seasoned with Sea Salt and Butcher Cracked Black Pepper.

Salads

Italian Potato Salad
Fingerling Potatoes, Fresh blanched Green Beans, Sicilian Olives and Shaved Red Onions lightly dressed with Organic Extra Virgin Olive Oil, Fresh Oregano, Whole Grain Mustard and Fresh Lemon Juice.

Southern Coleslaw
Fresh Shredded Napa Cabbage and Carrot Slaw, tossed in our Sweet and Tangy Dressing. Great on top of a pork sandwich or just by itself. (This is a creamy Coleslaw similar to a New England Style. If you mistook this for Carolina Coleslaw, it is not a problem. They are the same price point. It’s a quick fix.)

Tri-Color Pasta Salad
Tri-Color Fusilli Pasta cooked al dente. Tossed with Vine Ripe Grape Tomatoes, Shaved Red Onions, Baby Spinach, Kalamata Olives, Fresh Basil and Mini Mozzarella Balls (Bocchini). Dressed with a Basil Pesto Vinaigrette.

Tomato and Cucumber Salad
Fresh Vine Ripe or Beefsteak Tomatoes, Seedless Cucumbers, Shaved Red Onion, Fresh Basil, Organic Extra Virgin Olive Oil and Sea Salt.
