Charles Verdi, Proprietor & Executive Chef of Verdi Catering & Private Dining and previous Co-Owner & Executive Chef of RIBdiculous BBQ, launched his culinary career at the age of 18. Chef Charles gained a decade’s worth of knowledge in corporate dining. Having no prior experience, he tackled every job the kitchen offered. By quickly developing the necessary skills to manage and execute large scale food production, he evolved from an entry level position to manager of a satellite cafe on the campus.
Empowered by the freedom he found in creating menus and running a kitchen, Chef Charles decided to reinforce what he had learned. In 2010, he enrolled at the International Culinary Center (formerly The French Culinary Institute) in Manhattan, NY. Here he experienced an intensive course of study in classic French cooking techniques.
Prior to owning two catering companies, Chef Charles has served in the kitchens of some of the most esteemed restaurants in New York City including, The Mercer Kitchen, a New-American mainstay in the heart of Soho, led by the world renowned chef Jean-Georges Vongerichten, as well as Bar Eolo, a revered New York City Eatery featured in The New York Times, New York Magazine, The Wine Spectator, Best Chefs America, on CNN, New York Public Media and others.
His intense training and hunger for culinary enlightenment has resulted in the ability to compose menus which combine the flavor and soul of various cultures throughout the world.
