Honey Mustard Glazed Cedar Plank Salmon
Wild Caught Alaskan Salmon glazed with our House-made Whole Grain Honey Mustard and Sea Salt. Grilled on Cedar Planks. (This is a fun way to serve the Salmon. We figured Honey Mustard is a neutral flavor profile and not something you would typically see at a wedding, especially served on top of a Cedar Plank. This will also help with portion control.)

Fresh baked Challah Rolls. Served with Butter.

Shaved Carrot Apple Salad
Shaved Salad of Carrots, Granny Smith Apples and Golden Raisins. Dressed with a Whole Grain Honey Mustard and Rice Wine Vinaigrette.

Maple Roasted Yams
Local NJ Yams roasted whole in our charcoal pit. Split and served with a Maple Syrup Compound Butter.

Green Beans
Fresh Green Beans blanched then sautéed with Fresh Shaved Garlic, Lemon Zest, Lemon Juice, Sea Salt and Organic Extra Virgin Olive Oil.

Italian Station

Balsamic Grilled Caprese Chicken
Cage-Free Boneless Chicken Breasts marinated in Fresh Garlic, Organic Extra Virgin Olive Oil and Aged Balsamic Vinegar. Grilled then layered with Vine Ripe Tomatoes, Fresh Basil and Fresh Mozzarella. Broiled then drizzled with Organic Extra Virgin Olive Oil.

Semolina Bread
Fresh baked Semolina Bread. Served with Butter.

Eggplant Rollatini
Lightly breaded and rolled Eggplant Fillets, stuffed with Ricotta Cheese and Parmigiano Reggiano. Baked until golden.

Rigatoni alla Vodka
Semolina Rigatoni Pasta cooked al dente, simmered in a light sauce made with our House-made Pomodoro, Heavy Cream and Vodka. Tossed with Tender Green Peas and Fresh Basil.

Rigatoni with Garden Vegetables
Semolina Rigatoni Pasta, Asparagus, Garden Green Peas and Shaved Garlic sautéed in Organic Extra Virgin Olive Oil. Tossed off the heat with a Lemon, Scallion and Basil Pesto. Served with Pecorino Cheese.

Arugula and Baby Green Salad
Tender Baby Greens and Wild Baby Arugula tossed with Shaved Fennel, Shaved Red Onion and Shaved Parmesan. Served with your choice of (choose one): Strawberry White Balsamic Vinaigrette, Pomegranate Sherry Vinaigrette or a Lemon Dijon Vinaigrette.
