Whole Roast Pig
Local NJ hog, rubbed with Hawaiian Alaea Sea Salt then slow roasted in our Caja China until falling off the bone with Crackling Crisp Pork Skin. Served with our version of a Polynesian Sweet & Sour Sauce and our Papaya BBQ Sauce.
The finished Pig will be displayed on a decorated platter/tray with Fresh Fruits and Hibiscus Flowers.

Polynesian Grilled Chicken
Juicy grilled Cage-Free Drumsticks basted with  our House-made Polynesian Sweet and Sour Sauce then grilled over the coals.

Moku Ola Shrimp Skewers
Extra Jumbo Shrimp marinated in Ginger, Lime, Lemongrass, Thai Chilies and Coconut Cream. Skewered, glazed and grilled over the coals.
Topped with Toasted Coconut.

Smoke Roasted Sweet Potato
Local NJ Sweet Potatoes roasted whole in our charcoal pit.
Split and served with a Pineapple Compound Butter.

Mango and Baby Bitter Greens Salad
Tender Baby Green Salad with Ripe Mangos, Shaved Red Onion, Toasted Macadamia Nuts and Fresh Cucumbers.
Dressed with a Citrus, Mint & Honey Vinaigrette.

Jasmine Coconut Rice
Fluffy Jasmine Rice, steeped in Coconut Milk, garnished in Toasted Coconut.

Hala-Kahiki
Sweet and juicy whole Golden Pineapples, carved into chunks and grilled over our charcoal pit.
Sliced thin to be layered on Pork Buns, tossed with the other dishes, or just enjoyed by itself.
